Breakfast Casserole Recipe

I thought it might be fun to share this breakfast casserole recipe enjoy making.  It's super easy and a nice alternative to your typical dinner.  I got the recipe a long while back from my friend Kate!

Right before going into the oven...
Kate was sweet enough to let me post the recipe here on the blog too!  (Thanks, Kate)!

Breakfast Delight Casserole

Ingredients:
1 tube crescent rolls
2 cups cubed ham
5 eggs
½ Cup milk
Dash of salt and pepper
2 Cups frozen hash brown potatoes-Thawed
1 ½ Cups Shredded Cheddar Jack cheese

Directions:
*Spread the crescent rolls out on the bottom of a 9x13 pan
*Place the ham on top of the rolls
*Beat eggs, milk, salt/pepper, and set aside
*Layer hash browns over the ham
*Pour egg mixture over the hash browns
*Top with cheese
*Bake uncovered at 375 for 30 minutes ( I actually had to bake mine a little bit longer to be sure all the eggs had cooked).

This is a great meal to try at dinner time when you're wanting to try something different!

Back and forth to school 12 times??? My goodness. I hope your back is okay. Not fun!

My whole new life will start on Monday when Bella starts kindergarten. I feel I'm going to be entertaining Scout more that she won't be here to do it. Also, my wake up call will move to 5am. Ugh!

Very sweet to make the mom dinner! People like you can lift a little weight off someone's shoulders!

Oh no - whatever will I do without "The Veronica Blog"? ;) Hehe - it'll be fun to see your big reveal and see what you come up with. I've always liked your subtitle - "just the everyday life of a mommy and wife" - because that's exactly what your life is about right now and that is what is important.

That meal looks delicious! I'm still working on getting my act together on meal planning again after vacation, but I made a delicious broccoli soup last night from a new cookbook that focuses on whole foods. Basically, it's cooking things with fresh ingredients and making it from scratch, but this was so easy and really fast. I'll have to share sometime, because I modified it a little to make it my own.

Also, Ted told me he'd really like me to join the Y again. I really enjoyed the water aerobics classes when I had a membership before V was born, but since having kids I haven't figured out how to go back there. I just discovered they have a drop-in childcare program that is only $1 per hour per kid and is for kids from age 6 weeks, which makes it SO convenient for me. I was so worried about trying to find childcare, but this is perfect. Anyhow, enough rambling - I'll share more on my blog when I actually get myself over to the Y and start working out again. Just thought I'd share, because I know it's something we've talked about lots of times before. Love you!

It def helps to do things the night before. I do it already with my work bag and with Kyndra's bag for the sitter. It's nice not to have to worry about it in the morning and I can sleep a little longer.

Can't wait to see the changes you have planned!

Sounds like y'all are rockin' and rollin' with the routine! And man alive did you have a busy week with school and doctor appointments!

That recipe sounds delicious! We had someone bring us a breakfast casserole, and we loved it so much! Mainly because it was YUMMY, but also because it was different! I'm sure it was a hit! I will have to try out the recipe soon. . . . when I'm no longer on dairy restriction!?!?!

I can't wait to hear about your new blog name!
